THREE Meatless Monday Meals (with Paleo, Vegan, Whole 30, Gluten Free, Dairy Free options!)
As I’ve continued to learn more and more about the meat industry (I used to be a buyer of the deli wall category at the world’s largest retailer)…I’ve become more interested in trying to reduce the amount of meat we eat.
This means, finding creative ways to get the amount of protein we need and also, delicious and flavorful recipes. Here are three that I have tried and tested and 100% recommend. You can keep them vegan or add your choice of protein. To stay gluten free, I’ve noted which products we used as a substitute!
Recipe #1: Vegan Alfredo Sauce from Vegan 8 with Gardein Meatballs . This sauce is so easy, flavorful and creamy…ooooh I can’t wait to make it again! I highly recommend soaking the cashews in hot water for at least 30 minutes, then draining and making the recipe as directed. We used Banza Chickpea linguine as our gluten-free pasta!
Recipe #2: Vegan Lasagna from Hummusapien – if you had told me I could make a DELICIOUS tasting lasagna WITHOUT any dairy, I would have called you a liar. Once I saw Hummusapien’s recipe had 201 five-star reviews, I knew I had to try it out. It was amazing. Whether your vegan or vegetarian, you’ll be pleasantly suprised by this recipe! We used hearts of palm noodles from Palmini (ordered at link from Amazon).
Recipe #3: Whole 30 Cauliflower Falafel Meatballs from my prior post – this sauce is addictively delicious! We served it with brown rice!
